Tasting: A unique tobacco and roasted flavor, with the aroma of green apple. Refined tannins, delicate bubbles, and a velvety smooth texture.

Food pairing: With aperitif (cheese toasts, fresh fish, olive tapenade), with Indian or Oriental dishes (curry, tajine), grilled fish or hard cheeses (Parmesan, Comté, Mimolette).

Vinification: Hand-harvested. After a second fermentation in bottle, the wine is aged on lees for 1 year.
